Ingredients
· 1 tablespoon canola oil
· 1/2 yellow onion, diced
· 8 ounces brown and white mushrooms, sliced
· 2 cloves of garlic, minced
· 1/4 cup brown lentils, rinsed
· 2 1/2 cups vegetable broth
· 1 tablespoon tomato paste
· Salt and pepper, to taste
· 1 pound (about 4) gold potatoes, peeled and quartered
· 2 tablespoons salted butter
· 16 Suspicious Stew Pringles crisps (or another flavor of your choice)
Directions
1. Place oil in a medium pot or Dutch oven over medium-high heat, then add the onion. Sauté for 6 minutes or until the onions are soft and translucent.
2. Add the mushrooms, carrots, and garlic to the pot and sauté for another 2 minutes.
3. Add the broth, tomato paste, soy sauce, and lentils, and give a quick stir. Increase the heat to high until boiling.
4. Reduce the heat to medium, cover, and simmer for 20 minutes.
5. Test the stew, salt and pepper to taste, then add spinach and simmer for another 5 minutes or until the spinach is wilted.
6. While the stew finishes cooking, make the mashed potatoes. Place the potatoes in a small pot and cover with water. Cover the pot with a lid and bring to a boil. Lower heat to a simmer and let cook for 10 minutes or until the potatoes are easily pierced with a fork.
7. Drain the potatoes and return them to the pot. Add the butter, milk, and salt. Mash, combining everything together until smooth.
8. Preheat the oven to 350ºF.
9. Fill four 8-ounce ramekins 3/4 of the way with stew. Fill the last ¼ with mashed potatoes.
10. Crush the Pringles into crumbs, and sprinkle them over the top of the potatoes. Spray with cooking oil.
11. Bake for 10 minutes or until the tops are lightly browned.
